Gerardo & Rosa moved their family to San Diego in 1991 and opened their first Italian restaurant, Leonardo’s in Rancho Bernardo. Since 1987 the Teri Cafe has been serving the most delicious Japanese cuisine this side of Japan to a most appreciative audience of repeat customers. Each location is located in a local strip mall, so unless someone shares the good news of its location and delicious cuisine you probably will would never know it existed. But one visit and you undoubtedly become a regular.

This casual restaurant’s main attractions are its quick service provided by happy servers and it’s almost endless selection of memorable entrees. If you come for lunch, you can’t go wrong with one of their lunch specials, which is different every day Monday through Friday. Served every Thursday is their mini chicken Teriyaki skewers ($6.25) served on a bed of rice with a soft drink or hot tea and eight California rolls. It’s delicious and totally filling!

Sushi lovers will be very impressed with their nice selection of rainbow rolls, Hawaiian rolls, caterpillar rolls, flying rolls, aloha rolls, Philadelphia rolls, Albacore rolls and the list goes on down the page. And the prices are very reasonable for all of the delicious food you get ($1.19–$11.25).

Also popular are their great assortment of dinner entrees such as their chicken teri and fried shrimp entree served with rice, miso soup, greed salad and believe it or not a potato salad.

And being a noodle house, they pride themselves with serving the best home made noodles this side of Japan. So come try their Udon Noodle soup made with thick and delicious flor noodles. Entrees here to try include the chicken curry Udon and the Tempura Udon with shrimp and veggies. Another winner is their Ramen noodle soup with a variety of specialties added in such as the bean sprout soup, the stir fried vegetable and chicken soup and their popular pork with broiled egg on top.

Plus, dinner specials are served with rice, soup and salad each night from 4 p.m. to 9 p.m. A real crowd pleaser is the chicken teriyaki fried rice, tempura shrimp (2 pieces) and savory seasonal vegetables ($11.25). While it is the most expensive item on the menu, it is definitely worth the price for such an excellent meal.

Marine Room Restaurant Chef’s Share Recipe from their Cookbook for Clam Bake

Clam Bake originated on the northern East coast of the United States and has been a tradition through many generations. Living in Washington D.C. in the early 80’s, Chef Bernard said he would travel with my friend John who owns a turn of the century stone cottage in Vinalhaven, Maine.

He further said, “at the local port, multi-colored wooden fishing boats were bringing the harvest. Cockles, clams, mussels and Maine lobster were stored in bushels and ready for auction to the highest bidder. Basket in hand, we gathered the bounty and headed home for the time honored tradition of Sunday Clam Bake”.

Marine Room Restaurant chef’s Recipe from their cookbook for Clam Bake with Tips

Make sure to keep a cooler with ice in the trunk when you go shopping for shellfish, fish and proteins to ensure freshness while running errands…add a bottle of wine as well.
When buying clams, cockles and mussels make sure that all shells are closed.
Follow the recipe faithfully to make sure that you will not overcook any of the shellfish.
If you want to jazz it up and bring an Asian flare to it, add coconut milk, lemongrass and Szechwan pepper.
Sauvignon Blanc, Reisling or a Loire Valley Muscadet are fantastic wines to pair with this dish.

Clam Bake Ingredients:
1/3 cup kosher salt 1/4 cup cornmeal
2 pounds littleneck clams, scrubbed
2 pounds steamer clams, scrubbed
2 pounds black mussels, cleaned and debearded
1/4 cup grape seed oil
1 1/2 pounds new red potatoes
2 cups chopped yellow onions
2 cups chopped leeks, washed, white parts only
1 cup diced, peeled celery root
2 heads garlic, halved
1 teaspoon Old Bay seasoning
1/2 tablespoon freshly ground black pepper
4 sprigs lemon thyme
12 U-15 shrimp, peeled, deveined
3 (1 1/2 pound) lobsters
1 pound Andouille sausage, sliced 1” thick
4 ears fresh sweet corn, shucked
1 cup Chardonnay wine
1 quart vegetable stock 1 cup melted unsalted butter
3 organic lemons, cut into wedges
1 loaf crusty bread

Marine Room Restaurant chef’s Recipe from their cookbook for Clam Bake Directions

Add 1 gallon cold water to a large pot. Stir in salt and cornmeal. Add clams and then mussels. Soat for 30 minuted to purge the sand. Remove mussels and clams from the water. Transfer to colander. Add grape seen oil to heavy bottom 20 quart sockpot over medium heat.

Add potatoes, onions, leeks, celery root, garlic, Old Bay seasoning, black pepper and thyme sprigs. Cook 10 minutes or until lightly browned, stirring often.

Layer the following ingredients into pot: steamer clams, little necks, mussels, shrimp, lobster, sausage and corn. Pour in wine and vegetable stock. Cover pot with lid. Bring to boil over high heat. Lower heat to medium. Cook for 15 minutes or until lobster is bright red and clams are fully opened. Transfer lobsters to cutting board. Cut in half lengthwise and crack claws. With large slotted spoon transfer seafood and vegetables to large serving platter. Arrange lobster atop. Adjust broth seasoning with salt and pepper. Ladle over seafood. Garnish with parsley sprigs and lemon wedges. Serve with melted butter and crusty bread.

Dining at the world-famous Marine Room Restaurant is something that should be on everyone’s wish list and eventually bucket list, if you haven’t gotten there sooner. Not only is the gourmet cujisine second to none, but the sheer beauty of the setting of the waves literally smashing on the windows at hightide makes the Marine Room Restaurant world famous.

Strawberry & White Chocolate Mousse Napoleons

Thornton Winery is a family business, run by owners John and Sally Thornton, and son, Steve. One of the valley’s oldest wineries, they are best known for their Methode Champenoise sparkling wine and their Champagne Jazz concert series.

This recipe comes compliments of Executive Chef, Steve Pickell of the Thornton Winery.

Ingredients:
2 to 3 pints fresh strawberries
1 sheet puff pastry
6 teaspoons sugar
melted butter

White Chocolate Mousse:
1/2 cup cream
8 oz. white chocolate
1 1/2 cups whipped cream
4 eggs separated

Directions:
Melt together the cream, chocolate and egg yolks in a double boiler. Cool. Whisk egg whites until soft peaks are formed. Fold whipped cream into white chocolate mixture. Fold in egg whites. Cut puff pastry sheets into triangles. Lightly butter and sugar. Bake at 400 degrees for 5 minutes until puffed and golden brown. Cool. Cut in half crosswise.
